There’s no doubt that cauliflower is having a moment, and I’m certainly not complaining. As a kid, I remember only ever being served it in boiled form, and only eating it because my sister and I would smother it in cheese sauce first. It was more of a “would you like some cauliflower with your cheese” situation than the other way around. At the time, I was of the opinion that cheese made everything taste good! (These days, my skin  and digestive system aren’t the biggest fans.)

Getting curious in the kitchen helped me learn a lot of lessons, one of which was that vegetables can taste really great when they’re not boiled – even without weird cheese sauce! They can also be used in interesting and unexpected ways, and that’s exactly how cauliflower made it into this Low Sugar Vanilla Maca Green Smoothie Bowl.

Even though you wouldn’t expect it from a beige vegetable, cauliflower is loaded with vitamin C and other valuable nutrients that do the body good. It’s also low in calories and relatively mild in taste, which means you can add it to a smoothie bowl in order to 1) boost nutrition, 2) increase volume, and 3) add thickness, all without skyrocketing the calorie count. Next time your body feels like it needs a reboot, this smoothie bowl is one I think you’ll love!

Description

Cauliflower rice is the secret ingredient in this low-sugar green smoothie, adding creaminess, volume, and a whole lot of vitamin C!

Instructions

  • Add everything to the blender except toppings and whirl it up until completely smooth. The consistency should be fairly thick, but feel free to add more almond milk if you prefer to enjoy this as a smoothie in a glass.
  • Pour into a bowl, garnish with toppings and serve.

Notes

  • If you don’t have cauliflower rice, simply use small cauliflower florets – cauliflower rice is just easier to blend. Frozen cauliflower will help make the smoothie thick so no ice should be needed (which can dilute the flavour).
