Fact: Back at Thanksgiving I roasted a 16lb turkey for 2 people. Yes, my mum and myself. Of course, even being the big turkey lovers that we are, we only got through a fraction of our enormous bird that night. The rest was divided between the two of us for leftovers, and the next day, I got down to business in the kitchen, simmering the turkey bones on the stove to make stock. Even though it was perfectly delicious sipped on its own (yay bone broth!), I put most to use in this week’s recipe, Cozy Winter Squash and Turkey Soup.

Cozy Winter Squash and Turkey Soup

Before we get started, know that it’s ok if you don’t have stock made from bones. This works just as well with a bouillon cube dissolved in water. Warm, comforted, and cozy is exactly how I felt when I had my first bowl (hence the name) and what I’m about to share was lunch every day that week!

Cozy Winter Squash and Turkey Soup

Got Thanksgiving leftovers? This Cozy Winter Squash and Turkey Soup is a perfect way to use them up! Packed with protein and vitamins to keep your immune system strong, it’s also gluten-free, paleo, and Whole30-compliant.


Ingredients

Scale
  • 1/2 large yellow onion, chopped
  • 4 cloves of garlic, minced
  • 600g winter squash – any varieties such as acorn, butternut, or kabocha, peeled and diced
  • 2 large carrots, cut into rounds
  • 6 ribs of celery, diced
  • 6 cups stock – feel free to use stock made with a bouillon cube, or boil the bones from your turkey to make a super-flavourful stock. Use it in combination with water to make up the amount called for here. Use a gluten-free bouillon cube if necessary.
  • 1 tbsp each dried sage and thyme
  • 2 tsp each dried rosemary and oregano
  • 3 cups shredded cooked turkey
  • 1/2 tsp black pepper

Instructions

  1. In a very large soup pot, cook the onions, garlic, squash, and carrot pieces over medium-high heat. The pot will begin to get dry after about a minute, so add 1/2 cup of your stock to keep things moist.
  2. Toss in the herbs and pepper and continue stirring until vegetables have been cooking for about 5 minutes. They should be bright in colour and beginning to smell really good!
  3. Pour in the celery pieces and all of the remaining stock. Bring to a boil, then reduced heat to low and cover the pot with a lid. Allow it to simmer for 25 minutes.
  4. Shred 3 cups worth of leftover cooked turkey. Just before the 25 minutes is up, toss it into the pot. Allow the soup to continue simmering until the turkey is hot, then switch off the stove.
  5. Ladle into bowls and serve garnished with finely chopped parsley, if desired.

  1. angela, you will just have to celebrate american thanksgiving and do another turkey! esp since the first one turned out so well!
    i have been thinking all week that soup would hit the spot, given our recent rainy and cool weather…although tomorrow is going to be warm and sunny!!
    nothing new yesterday…but i have a new pair of wave rider 15s that need to be tried out later this week!

  2. Try something new?? Well, do I dare admit that yesterday, I started listening to my Christmas playlist on the way to work. Does that count? It’s never too early for Christmas music in my life!! I’m a freak, I know!

    1. Hehe that is awesome Sabrina!! I usually wait till at least mid-November for that, but since I’m planning to get all of my Christmas shopping out of the way VERY early this year, maybe the playlists will come early too. Joy to the world! 😉

  3. Oh my gosh, I want that chicken! For real, can we make it? I don’t think we’re getting together long enough. There are so many things I want to do!

    I’ve never seen that seasoning mix. It almost warrants me calling them up to see if there’s any hidden gluten in there… I love spice mixes!

    And wait, you don’t like the dark meat? I didn’t either as a kid but fell in love with it when I did the whole paleo thing last year. Horrible eating style for me, but boy am I ever happy that I gave dark meat another chance. It’s so juicy and fatty and delicious!

    1. Hehe um yes, I think you need to extend your trip another week AT LEAST lol! Maybe we should roast a turkey too for that matter – dark meat is all yours! 😉 If you call Costco to ask about the gluten thing, I’m more than happy to make a stop there to pick some more up for ya!

  4. Mmmm!!! My favorite soup is definitely tomato soup with a grilled cheese for dipping. Your soup sounds fantastic though! As do those chicken fingers. I’m going to look for that seasoning next time I go to Costco!
