One thing that’s rather ironic about being the writer of a holistic wellness blog with a large food component is that while the recipes you find here cover a wide variety of cuisines and ingredients, the meals I actually eat throughout the week are super basic. One might even say boring, but I’m a creature of habit and it’s just what works!

As I’m sure is the case for you, this week has been a bit of a manic one so far. With Christmas being next Tuesday, I’ve been finishing some big projects at work, wrapping up the last of my Christmas shopping, having a blast catching up with friends at holiday parties, and getting my apartment ready for my sister to come and stay. She arrives this weekend from the UK and we’ll be heading to Palm Springs to celebrate the holidays with my dad, which I’m super excited about. It’s been over 2 years since my sister and I last saw each other in real life (FaceTime doesn’t count) so needless to say, we have some catching up to do!

It’s weeks like this where sheet pan dinners have been saving me, and as I promised a couple of weeks ago when I shared this Sheet Pan Salmon and Herb Roasted Vegetables recipe, there are plenty of these in my to-post-on-the-blog queue to help make your dinner prep life easier. Today it’s Sheet Pan Balsamic Chicken + Italian Roasted Veggies – another high protein, paleo, and Whole30-friendly pick with pretty much identical instructions and prep time.

Similar to my choose your own adventure buddha bowl formulasheet pan dinners are kinda foolproof – unless you forget they’re in the oven. You can choose whatever veggies you like, but this time I went with bell peppers, zucchini and purple onion, all tossed in garlic, Italian herbs, balsamic vinegar and avocado oil. (Save your EVOO for lower temperatures.) Toss in a few sprigs of fresh basil and you’ve got yourself an easy, delicious dinner with leftovers that taste awesome the next day.

Note: If you’re planning to do a Whole30 know that technically speaking, balsamic vinegar is only Whole30-compliant if it contains no sulfites or ‘caramel colouring’. Sulfites occur naturally during the fermentation process, so if the vinegar you’re looking at says “naturally occurring sulfites”, that’s considered totally fine. However, sometimes manufacturers add more in order to extend shelf life, and these are the ones that aren’t compliant. Just be sure to read your labels if you really want to stay 100% to plan.

Sheet Pan Balsamic Chicken + Italian Roasted Veggies

Description

This Sheet Pan Balsamic Chicken + Italian Roasted Veggies will soon become a favourite in your weeknight meal plan, thanks to its easy preparation, speedy cleanup and amazing flavour! Paleo, Whole30 and high in protein.


Ingredients

Scale
  • 2 tbsp ovocado oil
  • 2 cloves finely minced garlic
  • 1/4 cup balsamic vinegar
  • 2 tsp dried Italian seasoning (or a blend of any of these: dried oregano, basil, rosemary, saje, marjoram, thyme)
  • 2 boneless skinless chicken breasts, about 130140g each
  • 1/4 small red onion, diced into 1” pieces
  • 4 cups sliced or diced zucchini (green, yellow, or a mix of both)
  • 1 yellow and 1 red bell pepper, diced
  • sea salt + black pepper
  • fresh parsley and basil leaves (optional, to garnish/serve)

Instructions

  1. Preheat the oven to 425F and line a large baking sheet with parchment paper.
  2. In a jar or sealed container, combine the avocado oil, garlic, balsamic vinegar and Italian seasoning.
  3. Lay the chicken on the baking sheet. Use a basting brush to coat each piece generously with the balsamic mixture.
  4. Roast the chicken for 15 minutes while you prep the rest of the recipe.
  5. After chopping all veggies to roughly the same size, toss them in a large bowl with the remaining balsamic mixture. Stir well to coat.
  6. After the chicken has been in the oven for 15 minutes, carefully take it out and scatter the veggies around it on the same pan.
  7. Sprinkle generously with sea salt and black pepper, as well as the fresh herbs (optional).
  8. Continue cooking for another 15 minutes, or until the chicken is fully cooked.
  9. Divide the chicken and veggies between plates/bowls. Garnish with fresh herbs and serve.
